This recipe is from The Cake Mix Doctor Cookbook that my sweet friend Elaine gave me after she discovered that she (as well as her girls) needed to go gluten free.
Anyway - this is a simple, yet DELISH cake!
Grease and flour pans (I use Baker's Joy)
1 plain white cake mix (I am a Betty Crocker girl)
1 cup whole milk
1 ENTIRE stick of REAL (please, no subbies) butter melted. (see why this cake was so yummy! Whole milk and a whole stick of butter! and we haven't even iced it yet)
3 large eggs
1 teaspoon vanilla extract (I use only Adams Extract, the others just don't taste as good)
2 teaspoons ground cinnamon
Cinnamon buttercream frosting
Preheat to 350. Grease either two rounds (9inch) or your 9 x13. I used my trusty 9x13
Place the cake mix, milk, melted butter, eggs, vanilla and cinnamon in a large mixing bowl. Blend with electric mixer on low speed for 1 minute. Stop and scrape sides. Increase speed to medium and beat 2 minutes more. The batter should look well combined. (and exciting at this point! The cake is almost done! The cake is almost done!)
Bake until golden brown and spring back a bit with your finger. Mine took about 30 minutes in the 9 x13. If you do two pans, it won't take as long.
Now for the frosting
1 Stick of butter at room temp
3 3/4 cup of powdered sugar
3 to 4 T of milk
2 t of vanilla
1 t of ground cinnamon
Place butter in large mixing bowl, blending until fluffy. Add sugar, milk and vanilla and cinnamon. Blend with the mixer on low speed until the sugar is incorporated. Increase speed to medium and blend until fluffy. (when I make buttercream, I just throw it all in and mix, mix, mix.

That sounds ultra yummy! Besides, any recipe with butter in it, is super in my book.
Have you ever made that sour cream cake with a box of cake mix, sour cream, and I think an egg? Oh, and maybe more sugar? I've got to find that one. We used to have neighbor who made them in a bundt pan and she'd share. Didn't even need frosting.

I do still read your blog! Just in chunks now and via bloglines. I have been wondering whether these recipes would work with my GF cake mixes. Maybe they'd make them better? I have a cake mix handy that I could try this with. Sounds yummy!
